Walnut, In a sense, can be likened to other nuts like cashew nut. This is produced by perennial trees. It has been grown by our forefathers from time immemorial for both its nutritional as well as its medicinal uses. Also, it occupies a place of priority and pride in ethno-medicine of the African.


Walnut has all the essential fatty acids especially linolenic acid and omga 3 fat. It is also significantly rich in essential amino acids like animal proteins. Also, it has about 15-18% of protein of high biological value and about 60% fats. They are mainly polyunsaturated essential fatty acids and linoleic acid.

Arginine is one of the essential amino acids that are abundantly found in walnuts. The cholesterol in walnuts are good one. Recent research has shown that walnuts are also rich in antioxidants. The others include flavonoids, quinines, etc.

white vinegar-2 tablespoon
lemon juice-2 spoon
pinch of salt
pinch of black pepper
walnut milk
crumbled blue cheese

  • mixed greens of green cabbages and lettuce
  • red grapes
  • 2 tablespoon finely chopped shallots

Preparation of walnut cabbage salad

Prepare a cheese cream by mixing chopped shallots, vinegar, lemon juice, pinch of salt and black pepper, walnut milk and cheese

Toasting for walnut cabbage salad: Heat the oven to and spread the walnuts on a baking sheet. Then toast for 10 to 15 minutes. Remove and then cool

Assembling and tossing of salad : Cut the red and green cabbages into large sizes. Wash and then dry. Put in a salad bowl. Add the the grapes. Sprinkle with the dressing and toss. Add the walnuts on top. The walnut cabbage salad, is read to serve.
